Fresh Caprese Salad


This is the perfect "delizioso" summer salad! Fresh mozzarella, basil, tomato, Balsamic vinegar and olive oil drizzle, and a sprinkling of salt and freshly ground black pepper. So many flavors with the creaminess of the fresh mozzarella and the tanginess of the Balsamic vinegar...it's just so good. If you have never made one of these salads before, you are in for a real treat. I like to buy the fresh mozzarella that Costco sells because it is pre sliced and ready to go. Roma tomatoes, fresh basil, and Balsamic vinegar are pretty much available at any grocery store, so getting the ingredients together is really simple. 

This salad is also good served with a small bowl of Balsamic vinegar mixed with extra virgin olive oil (in the same ratios mentioned above in the ingredients list for a perfect dip for some really good bread. You will want to use ciabatta, focaccia, como, or baguettes as they are a firm bread that can absorb the vinegar and oil without getting soggy. For this recipe, you will need the following ingredients:

Ingredients:

1-1/2 pounds firm tomatoes

1 pound fresh mozzarella, sliced

Salt, to taste

Freshly ground black pepper, to taste

1/3 cup basil leaves, cut into thin strips

1/4 cup Balsamic vinegar

3 tbsp high quality extra-virgin olive oil


Directions:

1. Slice the tomatoes and cheese into 1/4-inch thick slices. 

2. Arrange the salad on a serving platter with one piece of cheese and then one piece of tomato.

3. Season with the salt and pepper to taste. Scatter the basil leaves over the top.

4. Drizzle with the olive oil and Balsamic vinegar
