Quick Puff Pastry BBQ Chicken Pizza

This is a quick and easy recipe for bbq chicken pizza. I love bbq anything, but you can change up the toppings to whatever is your favorite. You kids will love this pizza recipe as well because they can build their own pizza too! 

The crust is made with puff pastry which gives it amazing flakey layers like a croissant. The sweetness of the barbeque sauce and the saltiness of the olive are just so good together. As my husband isn't a huge fan of barbeque sauce, I made him his own version using Marinara sauce for the base with Genoa Salami, sweet onions, and olives. You can keep it simple and just do cheese or cheese and pepperoni for the littles or load it up with a variety of fun toppings like artichokes, chicken, and feta. I do not recommend using more than four toppings as the base is not a typical pizza crust. Have fun and enjoy!

For this recipe, you will need the following ingredients:

Ingredients:
1 sheet puff pastry, defrosted (Pepperidge Farm 17.3 oz pkg-frozen)
1 cup rotisserie or deli chicken, chopped into chunks
1/4 cup barbecue sauce
1 cup mozzarella cheese, shredded
1/4 sweet onion, diced (adjust to taste)
1/4 cup black olives, chopped (adjust to taste)

Directions:
1. Prep the chicken, onion, and olives. Preheat oven to 425 degrees then line a baking sheet with parchment paper. Place defrosted sheet of puff pastry onto the parchment paper then set aside.




2. Stir 1 Tbsp of barbecue sauce in with the cooked chicken, stirring to coat. Spread the remaining amount of barbecue sauce onto the puff pastry like pizza sauce, making sure to leave a ¾" border around the edges all the way around.


3. Distribute chicken evenly over barbecue sauce then top with shredded mozzarella and thinly sliced red onions.
Bake 15-20 minutes until the cheese is bubbly and just beginning to brown and the pastry crust is golden brown.



4. Remove from oven and let cool for 2 minutes. Slice into large pieces then serve!
