Quick and Delicious Cheesy Corn Dip

My recipe for cheesy corn dip is simple and delicious. It is a hit every time I make it! We served it this year with our Cinco De Mayo dinner. We have homemade refried beans and guacamole, fried corn tortillas, and Barbacoa and Pulled Pork that are sooo good! Though we could not have our regular group of friends over the share, we still enjoyed it as a family. I miss making dozen and dozen of handmade tortillas with my group of foodie friends. We would each bring our favorite Cinco de Mayo dish and have one massive potluck...it was amazing! 
This dip is good served anytime and you can add additional ingredients like taco meat, diced onions, jalapeƱos, or green chilies to kick up the flavor. I hope you enjoy this quick and easy recipe as much as I do!
For this recipe you will need the following ingredients:

Ingredients:

2 cans of drained corn
1/2 cup sour cream
10 ounces of cream cheese, softened
1/2 tsp chili seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1 1/2 cup grated Monterrey Jack cheese
1 1/2 cups grated Mozzarella
1/2 cup Cotija cheese

1/3-1/2 cup finely chopped cilantro (adjust to taste)

Directions:

1. Combine ingredients together in a large bowl with a hand mixer.

2.Pour into a small casserole dish 8” x 10" or something similar in size.
3. Bake at 350 degrees for about 30-40 minutes or until cheeses are melted and golden brown on top. Serve with tortilla chips.
