So Easy Guacamole


4 large avocados
1 Roma tomato, finely chopped
1/8-1/4 cup cilantro, 
finely chopped 
2 tablespoons sweet onion, finely chopped
1/4 cup freshly squeezed lime juice
1 tablespoon kosher salt


Halve the avocados, remove the pits, and scoop the flesh into a large mixing bowl. Mash with the back of a large fork or a potato masher to make a chunky paste. Reserve 2 pits.

Add the remaining ingredients and stir to combine. Add the pits to the mixture. A friend of mine from Mexico said that this will help the guacamole from turning brown too quickly.Taste and adjust the seasoning as needed. Serve immediately. Cover remaining with a thin layer of plastic wrap. Press the plastic wrap onto the surface of the leftover guacamole to prevent browning, Can be left in refrigerator for up to 2 days. Enjoy!
