Perfect for Warm Summer Days...Simple Ceviche
Ingredients:
1/2 lb Swai fillets*
1/2 pound shrimp, deveined and cleaned*
1/2 pound small scallops*
5 -6 limes (Enough Juice to cover fish)
1 cup diced fresh tomato
1 sweet red pepper, chopped
4 tablespoons chopped parsley or 4 tablespoons chopped cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
1/2-1 tsp teaspoon oregano, adjusgt to taste
1 tsp sugar
2 jalapeno peppers,seeded, deveined and chopped
2-3 tablespoons white vinegar
1 medium sweet onion, finely chopped
1 cucumber, diced
3 tablespoons fresh cilantro, chopped
2 quarts tomato juice
Tabasco sauce, to taste

Directions:
Dice the fish and shrimp into 1/2-inch pieces.
Marinate fish, shrimp and scallops in the lime juice in the fridge overnight stirring often.
The next day, pour off most of the lime juice (just leave it moist).
Next, add the remaining ingredients except avocado. Refrigerate 2 hours longer.

Add avocado and Tabasco. Adjust salt, pepper and sugar to taste. Toss well and arrange in individual serving bowls.
