Simply Delicious Blueberry Scones


Ingredients:

2 cups all purpose flour
1/2 cup sugar
1 tbsp baking powder
5 tbsp unsalted butter, grated
1 cup heavy cream
1/4 tsp salt
1 large egg, lightly beaten
3/4 dried blueberries
heavy cream for brushing the tops
raw sugar for sprinkling the tops




For Glaze (optional):
1 cup confectioner’s sugar
4-5 tbsp milk
1 tsp vanilla extract
Directions:

Preheat oven to 375 degrees.

In a mixing bowl sift all the dry ingredients add grated butter to it and mix well.



Whisk the egg and add to heavy cream and whisk again. Add it to the flour mixture and gently blend everything together to make a dough.


Fold in the blueberries gently. 



Spread some flour on a baking sheet and transfer the dough and roll out to 3/8" thick.
Dip a biscuit cutter in flour and cut out scones. Brush tops with cream and sprinkle with sugar.


Transfer each piece to another baking sheet and bake it for 20 to 25 minutes.


Don’t worry if your dough is not perfect and is sticky. Spread it just like I mentioned and cut it and do not transfer it to another sheet. Just bake it in the same sheet for 20 to 25 minutes.



To make the glaze, add confectioner’s sugar to a bowl.

Mix vanilla extract and milk together and add it to the sugar and make a smooth paste. Place in the refrigerator. 

Check if the scones are ready by just poking it with a clean toothpick or skewer. It should come out clean.

Drizzle some vanilla glaze on top and serve.
