Spicy Beef & Bean Tex-Mex Casserole


Ingredients:

1 pound lean ground beef or turkey
1 medium yellow onion, finely chopped

1-16 ounce can spicy refried beans

1-10 oz can  Ro*Tel with diced tomatoes and green chilies


1-4 oz can diced green chilies

1-2 tbsp homemade taco seasoning mix (see recipe below), adjust to taste


1 tbsp sugar

1 tsp red pepper flakes

1/2-15.25 can reduced sodium kidney beans

1/2 cup corn, drained


1/4 medium yellow bell pepper, chopped

4 medium green onions, sliced

1 1/2 cups tomatoes, chopped

1 cup shredded cheddar

1 cup shredded lettuce


light sour cream

olives, sliced

tortilla chips, corn tortillas or flour tortillas



Directions:

Heat oven to 350 degrees. In 12-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain of excess fat.


Stir in yellow onion, refried beans, Ro*Tel,green chilies, taco seasoning mix, sugar,red pepper flakes,kidney beans, corn and yellow bell peppers. Reduce heat to medium. Cook for 10 minutes, stirring occasionally.


In an ungreased 9 x 13 baking dish, spread beef mixture. Sprinkle with green onions, one cup of tomatoes, cheddar cheese, sour cream and olives.


Bake uncovered 20 to 30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce and remaining half cup tomatoes. Serve with tortilla chips as a dip or wrapped up in corn or flour tortilla. Enjoy!



Homemade Taco Seasoning Mix: 

1 tablespoon chili powder

2 teaspoons onion powder


1 teaspoon ground cumin


1 teaspoon garlic powder


1 teaspoon paprika


1 teaspoon 
oregano


1 teaspoon sugar

1/2 teaspoon salt



Directions:

Mix all ingredients together in a small bowl. Store in an airtight container.
