Simply Savory Asian Turkey Cupcakes


1 pound ground turkey
1 cup crumbled extra firm tofu
1/3 cup low sodium soy sauce
1 teaspoon sesame oil

2 tbsp sweet chili sauce, plus additional for dipping
1-2 tsp maple syrup (you can use regular pancake syrup as well)
1/2 tsp red pepper flakes
3 tablespoons minced scallions (1-2 whole scallions)
1/2 cup carrot, shredded
2 tbsp sweet onion, minced
2 cloves garlic, minced
2 tbsp cilantro, chopped
1/2-3/4 cup unseasoned breadcrumbs
non-stick cooking spray 


Preheat oven to 400 degrees. 

Start with ground turkey in a mixing bowl. Add crumbled tofu and mix.

Add remaining ingredients in turn, mixing well each time: soy sauce and sesame oil, sweet chili sauce, scallions, carrot, onion, garlic,cilantro and breadcrumbs.

Form meat mixture into small meatballs, about 1 1/2 inch in diameter.

Bake meatballs on a lightly greased baking sheet for 20-25 minutes, until browned. Serve with sweet chili sauce. Enjoy!
