Savory Meat & Cheese Lasagna Casserole


1/2 pound ground turkey or beef 

1/2 pound pork breakfast sausage, casing removed
1 onion, finely chopped
4 cloves garlic, finely chopped
4 oz no bake lasagna noodle

2 15-oz. cans diced garlic and onion tomatoes
1 tbsp sugar
1 pkg sloppy joe seasoning mix
1 jar spaghetti sauce
2 teaspoons fresh parsley 
1 tsp dried dill
1 tsp dried oregano
1/2 tsp red pepper flakes
2 cups ricotta cheese
1 cup (plus 1/2 cup for top) mozzarella cheese, grated
1 cup cheddar, grated


With non-stick spray, coat the inside of a 8 x 8 baking dish. Set aside.

Brown ground turkey (or beef), pork sausage links (casings removed), onion and garlic until cooked in a large frying pan. Drain on paper towels and place back in frying pan. Add one can of diced tomatoes,one tbsp sugar and sloppy joe seasoning to meat mixture and cook for an additional 15 minutes. Stirring every few minutes.

Mix spaghetti sauce with second can of diced tomatoes in a large bowl and add parsley, dill, oregano and red pepper flakes.

Place a thin layer of tomato sauce mixture on the bottom of pan. Lay on layer of lasagna noodles over sauce. Cover noodles with 1/3 of meat mixture, ricotta and cheeses. Repeat two more times to make two additional layers. Cover with a layer of cheese.

Bake at 350 degrees for 30 to 45 minutes (until bubbly). Let stand for 10 minutes before serving. Enjoy!
