Simply Delicious Mexican Biscuit Bake Casserole


1 pound ground turkey, browned and drained

1 pkg spicy taco seasoning
1-10 ounce can Rot*Tel diced tomatoes with lime juice and cilantro
1/2 cup onions, diced
1 can Grands biscuits, any variety
1 can spicy refried beans
1 container light sour cream
1 cup grated cheddar
1/2-3/4 cup salsa
1/2 cup green onions, thinly sliced


Heat oven to 375 degrees.

Brown ground turkey. Drain fat, add taco seasoning and Rot*Tel tomatoes. Cook for 5-7 minutes, stirring occasionally on medium-high. Remove from heat and set aside.

Using a rolling pin, roll out each biscuit and place in a 13 x 9 baking dish sprayed with non-stick cooking spray. Try to squeeze edges together to form a seamless base.

Spread refried beans evenly over biscuit dough.

Spread meat mixture over bean layer.

Spread sour cream over meat mixture and sprinkle with grated cheddar, green onions and salsa.

Bake at 375 degrees. for 35 to 45 minutes or until edges are deep golden brown and center is set. Let stand 15 minutes. Cut into squares; serve with additional salsa and sour cream. Enjoy!
