Easy Spicy Pizza Muffins


1 tube Pillsbury pizza crust

1/2 pound spicy Italian sausage, browned and drained
8 oz. shredded mozzarella cheese
4 oz grated cheddar cheese
2 8-oz. cans tomato sauce*
1 Tbs. oregano
 Tbs. parsley flakes
4 tsp. onion powder
1 tsp. garlic salt
1 tsp. basil flakes
1 tsp red pepper flakes
salt and pepper


Preheat oven to 400 degrees. In a bowl, prepare pizza sauce by combining tomato sauce cans with all the seasonings. Adjust to taste. Set aside. Brown sausage, drain and set aside.

Roll dough out onto a flat floured surface. Cut 12 circles with a glass or large biscuit cutter and lay into muffin pan, making sure to press dough up the sides of each cup. 

Place 2 tablespoons pizza sauce over dough. Sprinkle mozzarella and cheddar over pizza sauce. 

Cover pizza sauce with sausage and cheese. 

Top with sliced olives. Spoon one tablespoon of sauce over muffins. Bake at 400 degrees for 15-20 minutes or until cheese is bubbly and crust is browned.

* Short on time? Use a jar of pre-made pizza sauce from the store.
