Cheesy Chili Cornbread Waffles with Fried Eggs, Mango Salsa and Sour Cream


1 box Jiffy corn bread mix
1 egg
3/4 cup milk
2 tablespoons canola oil
2 tablespoons sugar1/2 cup grated sharp cheddar
1/4 cup diced mild chilies, adjust to your liking
4 eggs, cook according to your liking
non-stick cooking spray

1-2 mangoes, diced
2-3 cloves of garlic, minced
1 small bunch of green onions, chopped
1 bunch of cilantro, chopped
1-2 jalapenos, minced
freshly squeezed lime juice

Toppings and Garnish:
sour cream
cilantro, finely chopped

Mmmmm...going, going, almost gone!


Chop up all of the ingredients and toss them into a big bowl. Add salt and pepper to taste.
Squirt fresh lime juice over the top. Stir well and set in fridge while you make the batter.

In a large mixing bowl, mix together all ingredients and cook in your waffle maker according to manufacturer's instructions. Serve warm with over easy fried egg, mango salsa and a dollop of sour cream. Garnish with finely chopped cilantro.
