Simply Delicious Black Forest Ham & Scrambled Egg Cups
12 slices ham
6 ounces cream cheese, softened
2 tablespoons milk
3 eggs
1/2 cup shredded cheddar cheese
2 tablespoons green onions, thinly sliced
1 onion, finely diced
1/2 tsp red pepper flakes (optional)
1/2 tsp finely ground pepper
1/2 cup ham, chopped
1/4 cup shredded cheddar cheese for tops
Directions:
Preheat oven to 375 degrees. Grease jumbo muffin cups with nonstick cooking spray. Line each muffin cup with two slices of ham.
In a small mixing bowl, beat cream cheese and milk until smooth.
Add eggs, cheese, green onion, onion, red chili flakes and pepper; mix well.
Place a slice of ham in a greased muffin cup. Sprinkle half of the ham into cups. Pour egg mixture to fill and sprinkle with remaining ham. Top off with remaining cheese.
Bake for 18-22 minutes or until a knife comes out clean. Allow to cool for five minutes. Enjoy!
