Oatmeal Chocolate Chip Peanut Butter Bars
Ingredients:
1 cup (2 sticks) butter, softened
3/4 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
pinch of salt
3 cups rolled old-fashioned oats
3 cups semi-sweet chocolate chips
2 cup chopped peanut butter cups
Directions:
Cream butter, sugars, egg, and vanilla with electric mixer on high.
Stir in flour, salt, and baking soda, all at the same time. Stir in oats. Last, add 2 cups of the chocolate chips and 1 cup of the peanut butter cups and stir them in (or use clean hands, if the dough is too stiff).
Press cookie dough into a greased 9x13-inch baking dish.
Bake at 350 degrees for 30-35 minutes, or until lightly golden and cookies are set in the middle.
Remove from oven and spread remaining peanut butter cups over the top. Using a spreader, smooth peanut butter cups over the top. Next, spread the chocolate chips over the peanut butter cup layer. The chocolate will melt on its own. After 10 minutes, use a spreader and evenly spread the melted chocolate. Cut into 12 bars. Enjoy!
