Easy Low Fat Chili Cheese Muffins
Pizza Dough:
1-13.8 oz. roll Pillsbury Classic Pizza Crust
Turkey Chili:
2 pounds ground turkey
1 large onion, diced
1 cup flour
1-28 ounce can diced tomatoes (remove some juice)
2-15 ounce cans tomato soup
1-28 ounce can kidney beans (or two cans)
3 teaspoons chili powder (or more)
salt and pepper
1 dash garlic powder, onion salt, tobasco sauce and liquid smoke (optional)
Toppings (optional):
1 cup low fat cheddar, grated
low fat sour cream
1/3 cup green onions, thinly sliced
red chili flakes
Directions:
Chili:
Combine meat and onion in a large pan and cook until meat is browned. Remove from pan and drain fat by placing on paper towels. Return drained meat to pan.
Stir in flour and add tomatoes, soup and kidney beans.
Add seasonings, stir. Bring to boil, then simmer on low for 1 hour stirring occasionally.
Spread out dough onto lightly floured board and roll out to 1/2 " thick rectangle. Cut into 4x4 " squares and place into sprayed cupcake pans.
Bake at 375 degrees for approximately 15 minutes or until golden brown. Fill with chili and top with cheese and green onions.
