Simple Mint Oreo White Chocolate Truffles


Ingredients:

1 pkg mint Oreo cookies
1 pkg Oreo cookie (regular or double stuff)
2 pkgs light cream cheese
2 pkgs Wilton vanilla candy melts or white chocolate chips
4 tbsp vegetable shortening
Crushed peppermint candies

Directions:

Cover 2 large baking sheets with wax paper or aluminum foil. Set aside.

In a food processor, grind up Oreo cookies until crumbly. Process until they are coarse without any big pieces remaining.  Add to a large mixing bowl and add the 2 pkgs of light cream cheese.  Mix thoroughly.  Roll into 2" balls and place on prepared baking sheet. 

Place in freezer for at least one hour.  I like to make mine ahead of time and bring them out when I need them.  You can freeze these in a plastic freezer bag on a baking sheet for up to two weeks.  

Meanwhile, place candy melts and vegetable shortening in a double boiler.  You an make a double boiler by placing a glass bowl over a pot of boiling water. Make sure that you do not get any of the water in the melts, otherwise you will ruin your melt mixture.

Remove cookie balls from freezer and roll two at a time in white chocolate. There are various tools you can buy at the baking store to dip truffle or bonbons, but you can also use a large spoon to coat them.  Place coated balls on tray and coat tops with whatever sprinkles you like.  They will set in about 5 minutes.  Package these little minty delights up for friends and family....a great sweet treat for the holidays.  Enjoy!
