Cheesy Black Bean Spinach Enchiladas from The Garden Grazer

These guys will blow your mind! My husband and I can't get enough. It's a common go-to meal that never lets us down. Before now, it never occurred to me to make my own enchilada sauce but I'm so glad I did because it's actually really simple and can be easily tweaked to your own taste (i.e. adding your own favorite seasonings, or some cayenne pepper if you like a kick.) It really added that something special to this dish, taking it above and beyond what was already amazing deliciousness! Shout out to Martha for the idea for this rock-star recipe. :) It's a definitely a keeper - even the leftovers are incredible.
