Applewood Smoked Bacon & Maple Syrup Collard Greens


Ingredients:

1 tsp. olive oil
1 medium onion, thinly sliced
1/2 lb applewood smoked bacon
2 garlic cloves
1 bunch collard
1/4. maple syrup
1 tbsp. vinegar
1/2 tsp sugar
1/4 tsp. salt
1/4 tsp. black pepper

Directions:

Saute onion, garlic and bacon until the onions and bacon are crispy, about 10 minutes in a large frying pan. Make sure to stir often so that garlic does not turn overly brown and bitter. Remove onion, garlic, and bacon from pan and drain on a paper towel. Set pan aside.'

Wash collard greens and pat dry with a paper towel. Strip the collard greens of their stems, roll up and cut into strips. 

Add the collards to frying pan with bacon drippings. Cook on medium high, turning frequently, for about 7-10 minutes to remove some of the excess liquid. Add maple syrup, vinegar, salt and pepper.  Taste and add additional salt and pepper to your liking.
