Simply Delicious Homemade Fettucine


2 1/2 c plus 2 Tbsp semolina flour*

1 tsp salt

3 large eggs

3-4 Tbsp cold water

1 Tbsp olive oil


Knead all ingredients together, then let stand for 20 minutes before rolling into pasta.  Using a pasta machine, roll out your pasta to the desired thickness.  Lay freshly cut noodle on a drying rack or a counter lightly dusted with flour to dry out (approximately 15 minutes).  Using a large pot, boil water and add olive oil and salt.  Add noodles when the water comes to a rolling boil. Cook noodles until al dente. You will need to keep a close eye on the pasta as fresh pasta cooks much quickly than dried.

*I used a mixture of half semolina and half whole wheat flour.
