Black Forest Ham Pizza with a Smoked Cheddar and Cauliflower Crust
Ingredients:
Crust:
4 eggs
1 cup mozzarella cheese, grated
1 cup smoked cheddar, grated
4 cups grated cauliflower
6 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
Toppings:
1 jar marinara sauce
1/2 tsp red pepper flakes
1/2 cup mozzarella cheese, grated
1/2 cup smoked cheddar, grated
1/4-1/3 pound Black Forest ham, thinly sliced into small pieces
1/4 cup sweet Vidalia onion, chopped
2 green onions, thinly sliced
1/4-1/2 cup black olives, sliced
1/4 cup Roma tomatoes, chopped
1 cup mozzarella cheese, grated
1 cup smoked cheddar, grated
4 cups grated cauliflower

Toppings:
1 jar marinara sauce
1/2 tsp red pepper flakes
1/2 cup mozzarella cheese, grated
1/2 cup smoked cheddar, grated
1/4-1/3 pound Black Forest ham, thinly sliced into small pieces
1/4 cup sweet Vidalia onion, chopped
2 green onions, thinly sliced
1/4-1/2 cup black olives, sliced
1/4 cup Roma tomatoes, chopped
Directions:
Preheat oven to 450 degrees.
Spray 2 large cookie sheets with non-stick spray.
In a large bowl, combine first seven ingredients. Divide into 8 portions for individual crusts or 4 for medium sized pizza crusts. Press evenly onto sprayed baking sheets and form into a thin circle.
Bake the crusts at 450 degrees for 15-20 minutes. If you prefer a crispier crust, turn the heat down to 350 degrees. Check crust every five minutes.
Remove the cookie sheet from the oven.
Add red pepper flakes to marinara sauce and add approximately 1/4 cup of sauce to your crust. You can add more of less to your liking.
Sprinkle a small amount of the two cheeses on top of the crust. Add a thin layer of sliced ham followed by sweet onions, green onions, black olives, tomatoes, and a topping of cheese.
Top off with a gentle sprinkle of red pepper flakes (you can omit this if you prefer).
Return to the oven until toppings are cooked and melted together with the cheese, about 10-15 minutes. Remove from oven and serve.
