Quick & Delicious Hash-Brown Eggs


1 cup onion, chopped
1 cup potato, grated
Butter for frying
1/2 cup cheddar, grated
2 eggs
Salt and Pepper
Fresh salsa for serving


Fry chopped onion and grated potato in a cast-iron skillet with butter until crisp.

Add grated cheddar and crack in 2 eggs; season with salt and pepper.

Bake at 425° until set; top with fresh salsa.
