Crispy Curried New Potatoes



Ingredients:

1 1/2 pounds new potatoes, all about the same size
1/3 cup vegetable oil
1 medium shallot, thinly sliced
1 teaspoon curry powder
1/2 teaspoon kosher salt, plus more as needed
