Crispy Cod Nuggets
Ingredients:
2 pounds cod filets cut into 2-inch nuggets
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs
2 sleeves Ritz crackers, finely ground
olive oil for drizzling
Directions:
Preheat the oven to 450F.
Drizzle a baking sheet evenly with a little olive oil and set aside.
Combine the flour, salt, and pepper in a wide shallow bowl and set aside. Then beat the eggs in a wide shallow bowl and set aside. Place the ground Ritz(tm) crackers in a wide shallow bowl and set aside. From left to right, line up the flour, egg, and ground crackers respectively.
Dredge one cod nugget in the seasoned flour and shake off excess. Then dip the coated fish into the egg, then directly into the ground crackers. With a dry hand, toss well to coat and place on the greased baking sheet. Repeat with the remaining fish.
Drizzle lightly with the olive oil. Bake for 10-15 minutes until golden brown.
Remove from the oven and serve immediately with lemon wedges.
The cod nuggets may be frozen once breaded before being baked by individually quick freezing them in a single layer, then sealing them in a plastic bag.
To cook them, place frozen on a greased sheet pan, per the recipe's instructions.
