Candied Bacon-Pecan Waffle


Ingredients:

14 strips of bacon (reserve 2 strips for garnish)
1/2 brown sugar (you can adjust amount to your taste)
1 3/4 cups flour
4 tsp baking powder
2 tablespoons sugar
1 tsp salt
2 eggs
1 1/2 cups milk
6 tbsp melted shortening
4 tablespoons melted butter
1 cup chopped pecans, reserve half for garnish

Directions:

Sprinkle 12 strips bacon with brown sugar and bake at 400 degrees F until crisp; cool, then crumble. Whisk 1 3/4 cups flour, 4 teaspoons baking powder, 2 tablespoons sugar and 1 teaspoon salt. Mix in 2 eggs, 1 1/2 cups milk, 6 tablespoons melted shortening and 4 tablespoons melted butter. Add 1 cup candied bacon and 1/2 cup chopped pecans to the batter. Cook in a waffle iron until crisp. Top with more bacon and nuts.
