Amazingly Simple Tomato Soup Grilled Cheese


8 (3/4-inch) slices hearty Italian bread
3 tablespoons butter, softened
8 (3/4-ounce) slices American cheese
1 (14.5-ounce) can diced tomatoes with basil, garlic and oregano, drained


Spread 1 side of each bread slice with approximately 1 teaspoon butter.

To assemble each sandwich, top 1 bread slice, buttered-side down, with 1 cheese slice, 1/4 cup tomatoes and 1 cheese slice. Place 1 bread slice, buttered-side up, over cheese.

Heat 12-inch skillet or griddle over medium heat. Place 2 sandwiches into skillet; cook, turning once, until golden brown and cheese is melted (4 to 6 minutes). Repeat with remaining sandwiches.
