Peanut Butter Banana Bread with Reese’s Peanut Butter Cup Cream Cheese Glaze (Gluten-free & Wheat Flour Versions)

Gluten Free Banana Bread

4 cups brown rice flour
1 1/3 cups potato starch
2/3 cup tapioca flour

1/2 teaspoon xanthum gum
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup salted butter, softened
1 cup granulated sugar
2 eggs
1/4 cup vanilla yogurt
1 teaspoon vanilla
1 teaspoon cinnamon
1 cup mashed bananas (approximately 3 bananas)
1/2 cup cacao chips, roughly chopped

Peanut Butter Cream Cheese Filling

4 oz cream cheese, room temperature
1/2 cup crunchy peanut butter
1 large egg yolk
1/4 cup granulated sugar
In a medium bowl, beat together cream cheese, peanut butter, egg yolk and sugar until smooth and fluffy. **Pour half of batter into prepared pan. Spoon peanut butter mixture on top, spreading it into an even layer. Pour remaining batter on top and spread top batter into an even layer. Follow directions in original recipe for baking time.
Reese’s Peanut Butter Cup Cream Cheese Glaze
4 oz cream cheese, room temperature
1/2 teaspoon vanilla
1/4 brown sugar
1/3 cup heavy whipping cream
Use hand mixer to beat cream cheese until smooth. Add sugar and vanilla and beat until smooth. Gradually add the heavy cream and blend until smooth. Roughly chop 8 miniature Reese’s Peanut Butter Cups and fold them into the glaze. Adorn the bread with this decadent glaze and enjoy.

*Banana Bread Recipe (wheat flour version)
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Preheat the oven to 350°F (175°C).
With a spoon, mix butter with the smashed bananas in a large mixing bowl.
