Low Fat Mongolian Beef


1 pound flank steak/london broil, trimmed
1 1/2 tablespoons of cornstarch
1/2 cup water
1/3 cup firmly pack brown sugar
1/3 cup low-sodium soy sauce
1 tablespoon canola oil
3 garlic cloves, minced
1/2 teaspoon grated peeled fresh ginger
1/4 cup green onions, sliced


Cut steak diagonally across the grain into thin slices. Combine steak and cornstarch in a bowl.  Toss and set aside. Combine water, brown sugar and soy sauce in a small bowl and set aside.  Heat oil in a large nonstick skillet over med-high heat. Add garlic and ginger, saute 1 minute.  Add steak; cook 3 minutes or until browned.  Add brown sugar mixture to steak and cook 4 minutes or until sauce thickens, stirring occasionally.  Serve over brown rice and sprinkle with green onions.
