Easy Creamy Ranch & Veggie Pizza


This is a recipe a friend shared with me years ago when we had a tea party for our Girl Scout troop. All of the girls and the moms raved over it! The recipe is so quick and easy and it is a great way to get your kiddos to eat their vegetables! I think the creaminess of the cream cheese, zestiness of the ranch, saltiness of the cheese, and the crunch and sweetness of the chopped vegetables blend perfectly. I know you will love this Ranch Veggie Pizza too! You can switch out the veggies to ones that are your favorites, but keep in mind that tomatoes, cucumber, or any other wetter vegetables may not work as well and make your pizza soggy. This is also a great recipe for kids who are learning to cook or littles who want to be involved as they can roll out the dough, mix the cream cheese and ranch seasoning, and learn to cut vegetables. For this recipes, you will need the following ingredients:

Ingredients:

2 tubes of croissant dough
1 tbsp garlic powder
8-12 ounces cream cheese, softened*
1-1 oz pkg Hidden Valley Ranch dry dip mix*
1/4 cup fresh broccoli, finely chopped
1/3-1/2 cup yellow, orange or red bell pepper finely chopped
2-3 green onions, finely sliced
1 1/2 cups of finely shredded cheese (you can add more if you like)
* If you want a thicker layer of cream cheese and ranch, you can double the ingredients.
Directions:

1. Unroll and flatten out the dough sheet onto a large cookie sheet lined with parchment paper or coated with non-stick spray. Bake at according to package directions. Crust should be a golden brown. If using croissant dough, make sure to seal the seams so that it is one sheet of dough. Sprinkle the garlic powder over the dough before baking.





2. Remove from oven and allow to cool completely. Set aside.


3. Cream together cream cheese with one packet of dressing mix and set aside.


4. Finely chop all vegetables and set aside.


5. With a spatula carefully spread a thin layer of the cream cheese mixture over cooled crust.


6. Top cream cheese layer with desired amounts of veggies and grated cheese. I like to gently press my ingredients into the crust before I cut it. Cut into slices using a pizza cutter and enjoy!
